Cut all of the lemons in half lengthwise and then slice them thinly. Mash the lemons with the sugar and salt in a large, deep bowl or crock, using an old-fashioned potato masher or heavy wooden spoon. Mash until the slices give up their juice, the sugar is dissolved and the juice is syrupy. Peel the rinds from the 5 lemons and cut them into 1/2 inch slices. Set the lemons aside. Place the rinds in a bowl and sprinkle the sugar over them. Bring water to a boil in a covered saucepan and then pour the hot water over the sugared lemon rinds. Squeeze the lemons into another bowl.
